Marrakech is the food city of a country that doesn't have a restaurant tradition in the Western sense. Almost all of the best eating happens in family houses, on the food stalls of Jemaa el-Fna at night, or in restored riad dining rooms that the chef and her family run themselves. The cuisine is one of the world's oldest synthesis cuisines — Berber base, Arab-Andalusian high end, French colonial flourishes, sub-Saharan spice route influence. Expect lots of slow-cooked tagines, the staple bread khobz at every meal, and meals that take two hours minimum. Vegetarians are easier to accommodate than they used to be; vegans should plan ahead.

Four neighbourhoods to anchor a few days of eating
Medina (Old City)
Inside the walls. Souks during the day, food stalls in Jemaa el-Fna after sundown, the city's tourist heart but also its food center.
Gueliz (New City)
Built by the French colonials, more grid-laid, more cafés and bakeries. Good for breakfast and for non-Moroccan food when you need a break.
Hivernage
Upscale residential area south of Gueliz. Some of the best high-end Moroccan restaurants, often in hotels.
Mellah
Old Jewish quarter inside the medina. Spice market is the city's reference; small kosher and ex-kosher restaurants still operate.

— Slow-cooked stew named for the conical pot. Lamb with prunes; chicken with preserved lemon; vegetable. Eat with bread, not a fork. - 02
Couscous
— Friday lunch tradition — steamed semolina under broth and seven vegetables. Order on a Friday or it won't be on the menu. - 03
Pastilla
— Pigeon or chicken pie wrapped in warqa pastry, dusted with sugar and cinnamon. Sweet-and-savory in a way that surprises first-timers. - 04
Harira
— Lentil-and-tomato soup, served especially at iftar during Ramadan but year-round in tasca-style places. - 05
Mechoui
— Whole roasted lamb, sold by weight from market stalls near Jemaa el-Fna. Pull off pieces with khobz. - 06
Mint tea
— Green tea with mint and sugar, poured from a height. Not optional; you will be served it everywhere.
Practical notes
Meal timing, tipping, payment
Eat lunch at 13:00, dinner from 20:00. Tipping 10% in restaurants, small change at stalls. Cash for the souks; cards at higher-end places. Avoid Jemaa el-Fna stalls during their setup window (16:00–18:00) when food has been sitting; eat at 19:00 or later when it's freshly cooked.
