The guide

Kyoto is where Japan's old food culture survives in working form. The capital for a thousand years before Tokyo, it kept its temple kitchens, its imperial kaiseki, its tofu makers and dashi houses, and its obsession with the seasons. Eating well here means eating slowly, often in a room you sit on the floor in, often a meal that took three hours of someone's day to prepare. Street food is more restrained than in Tokyo or Osaka. The celebrated places book out weeks ahead: kaiseki houses behind doors with no signs, tofu shops in their fourth generation, the breakfast counters at the old inns. The reward is some of the most refined food in Japan, served in a city that still feels like it's running on the original calendar.


Where to focus

Four neighbourhoods to anchor a few days of eating

Gion

The geisha district east of the river. Old wooden machiya houses, ochaya tea houses, kaiseki restaurants behind doors with no signs. Walk Hanamikoji-dori at dusk; eat at one of the smaller kaiseki places in the side streets.

Pontocho

A single lantern-lit alley along the Kamogawa river. Restaurants on both sides, summer kawayuka terraces over the river itself, traditional kaiseki at the high end and grilled-eel counters at the everyday end.

Nishiki Market

Kyoto's covered food market, five blocks of tsukemono shops, dashi houses, knife sellers, and the small stand-up bars where Kyotoites eat lunch. The city's food memory in one street.

Arashiyama & Sagano

West-of-city temple district. Yudofu (boiled tofu) restaurants by the river, vegetarian shojin ryori at the Zen temples, soba shops in old farmhouses. Day-trip eating, slow lunches.


What to eat

The dishes the city is known for

    Kaiseki ryori

    · Multi-course seasonal tasting menu, the original of what the West thinks of as 'fine Japanese.' Eight to twelve small courses, each plated to match the season. Book weeks ahead.
  2. 02

    Yudofu

    · Silken tofu simmered in kombu dashi at the table, eaten with soy and grated ginger. A specialty of the Arashiyama temple-shop district.
  3. 03

    Obanzai

    · Home-style Kyoto cooking. Small plates of seasonal vegetables, simmered fish, tsukemono. The city's everyday cuisine, served at small counters and lunch shops.

    Kyoyasai

    · Distinctive heirloom vegetables (kamo eggplant, kintoki carrots, kujo leeks) grown only here and treated with reverence at every level of restaurant.
  5. 05

    Matcha sweets

    · Powdered green tea folded into mochi, ice cream, parfaits, and the formal wagashi served at tea ceremony. Uji, just south of the city, grows the best matcha in Japan.
  6. 06

    Nishin soba

    · Buckwheat noodles in dashi with a long-simmered herring on top. A Kyoto invention from when the city was far from the sea.

Practical notes

Meal timing, tipping, payment

Lunch 11:30–14:00, dinner 17:30–21:30. Kaiseki dinners run two to three hours and start at a fixed time; arrive five minutes early. Cash at the temple-area shops and old kaiseki houses; cards in the centro and chain shops. Many of the best places are reservation-only. Concierges or apps like TableCheck for the foreigner-friendly options. Tipping is not done; do not.
